saveur short on
burned beets; basically, boil them till they're soft, smash them, then pan fry them in cast iron till they blacken. i'll bet they'd work under a broiler too, coated in oil and kosher salt.
they suggest serving them with goat cheese, garlic chips, and the beet leaves.
